Salsa Ranch Dressing and Leftover Fajita Salad Recipe

I’ve been on a roll with the salad and dressing recipes I’ve been posting so I’ll keep it going today with a Salsa Ranch Dressing and Leftover Fajita Salad Recipe.  You will NOT believe how easy this one is!  Leftovers never tasted so good!

I never want to let anything go to waste.  Even if there are just a few pieces of chicken fajitas left over I won’t throw them out.  In fact, for the salad I photographed for this recipe actually had a little chicken left over from two evening meals so I mixed them together.

It’s also great with leftover rotisserie chicken!

Leftover Fajita Salad Recipe

  • romaine lettuce
  • grape tomatoes
  • leftover chicken
  • leftover grilled onions & peppers
  • a few crispy onions
  • grated cheese
  • my homemade salsa ranch dressing

Salsa Ranch Dressing

  • your favorite salsa
  • ranch dressing – store bought or a healthier version with Greek yogurt.  My recipe can be found here.

BTW, I’m NOT endorsing La Victoria salsa.  I have a recipe that I need to share for an easy salsa that’s MUCH better!  But that’s what I had on hand that day.  I don’t really like it but if I mix it with the ranch dressing I can eat it.

    I love ranch and salsa together!! I am glad to see I am not the only one who has discovered this!! It really is yummy and adds just the right kick to salad. One of my favorite summertime dinners! Thanks for sharing. We must have similar tastes!!
