Usually my new recipe ideas come from the leftovers I have in my fridge. That’s where this one came from! I wanted something more than a lettuce based salad and when I went to my fridge today these are the ingredients I found. And, what do you know… this tomato, avocado, and corn salsa salad is just about the most delicious I’ve ever made!

I ate a whole plate of this as my lunch but it would also be a great side dish to some spicy grilled chicken breast! Healthy and delicious!!!
This is what I used to make my one plate. It might serve two people as a side dish. But if I’m one of those two people you should probably double it! ‘Cause this is now my favorite salad!
Tomato, Avocado, and Corn Salsa Salad
- 1 cup cherry tomatoes, sliced in half
- 1/2 small avocado, diced
- 1/4 cup feta cheese crumbles
- 1/4 cup corn salsa
- freshly ground black pepper
- cilantro to garnish
I think this corn salsa is the secret ingredient! (BTW, Trader Joe’s is NOT a sponsor… I just like shopping there.) A friend brought it over last week and I’ve been eating it on chia chips and in taco bowls… also both delicious!
I served this on my favorite salad plates by the Pioneer Woman!

Looks tasty. Doesn’t everyone throw leftovers into salads? In Maine, we have SUCH long winters, leftovers get thrown into soup (often a can of “storebought” to start with) and is called “mystery soup.” An acquaintance called it “enthusiasm stew” caz he threw everything he had into it!

ourgettes are zucchini but any squash will do, passata is like thick tomato juice – so tinned tomatoes in the blender would work too (or very well cooked de-skinned fresh tomatoes blended). Hope you love it as much as we do… all my recipes are vegetarian so hopefully you can find some other yummy foods to try too! 🙂
