Every year we go cookie crazy at Christmas time! We have a few favorite cookie recipes that we go back to over and over again but every year I like to try a few new ones, too. Today I’m sharing 3 last minute, super easy Christmas cookie recipes that you can whip up in no time at all. (Just in case your daughter forgot to tell you that you’re in charge of the snacks for the 4-H meeting that starts in 45 minutes… true story.)

3 Easy Christmas Cookie Recipes
Chocolate Chip Oatmeal Gingerbread Cookie Recipe
Just ignore that the background of this looks very fall-ish. But these spicy cookies taste and smell like all the fall holidays. I bake ginger cookies from Halloween all the way through Christmas.
- Betty Crocker Gingerbread Cake and Cookie Mix
- 2 T flour
- 2 T melted butter
- 1/4 c water
- 1/2 c mini chocolate chips
- 1/3 c oatmeal
Preheat oven to 350 degrees. Mix cookie mix and flour. Add melted butter and water, mix. Stir in chocolate chips and oatmeal by hand.
Use small cookie scoop to dip dough onto stoneware baking sheet. Bake 8 minutes on bottom rack of oven. Remove from oven. Wait about 2 minutes, move to cooling rack.
Sugar Cookie Thumbprint Cookie Recipe
These next cookies can be dressed up with a little white chocolate drizzle and/or green sanding sugar to make it look like you spent HOURS in the kitchen!
- Betty Crocker Sugar Cookie Mix
- 1/2 c butter, softened
- 1 egg
- raspberry jam
- 1/4 c white chocolate chips, melted (optional)
- green sanding sugar (optional)
Follow instructions on the package to make the mix.
Use small cookie scoop to make balls of dough. Place on stoneware baking sheet. Roll slightly to get a nice round shape. Press thumb in the center of each ball of dough. Add 1/4 t. raspberry jam and spread it around to fill the indention.
Bake at 350 for 7-9 minutes on bottom rack of oven. Remove from oven. Wait about 2 minutes, move to cooling rack.
When cookies have cooled completely, drizzle melted white chocolate over each cookie. Sprinkle green sanding sugar.
Chocolate Chip Half-n-Half Cookie Recipe
Why stop with just regular chocolate chip cookies? Mix up regular AND double chocolate then blend them together to make one even more amazing cookie.
- Betty Crocker Chocolate Chip Cookie Mix
- Betty Crocker Double Chocolate Chunk Cookie Mix
- 1 c butter
- 2 eggs
- 1/2 c white chocolate chips (optional)
Follow instructions on the packages to make the mixes.
Use small cookie scoop to make balls of dough. Split each ball in half and roll with a half ball from the other mix. Place on stoneware baking sheet.
Bake 8 minutes on bottom rack of oven. Remove from oven. Wait about 2 minutes, move to cooling rack.
See how easy these are? I timed myself for one batch and I had them in the oven in less than 8 minutes!
