As much as I love avocado… and toast, for that matter, I had never had avocado toast for breakfast until Labor Day when we drove down to Santa Cruz to go to the Boardwalk. Â The kids wanted to go visit some of their friends who had opened a coffee shop called Cat and Cloud. Â It was about 10 am when we got there and I just couldn’t resist this.
Man, was it good! Â Three different kinds of delicious bread, perfectly toasted. Â I did share but I could have eaten the whole thing, it was that good!

Avocado Toast
The simplicity of this meal means that you have to start with outstanding ingredients.  There aren’t any added ingredients to cover up stale bread or overripe avocado.
I went to our local bakery and got three different kinds of bread. Â They weren’t quite as good as the dish at Cat and Cloud but it was close.
I smushed up one small avocado and just added a tiny bit of salt. Â I decided to pass on the butter.
