Wow… today was a BUSY day! I drove 156.9 miles to set up for the November sale at Paris Flea Market and to deliver jewelry to a NEW shop in Linden, California — more on that later. After a day like that I was in no condition to cook dinner so we planned to eat out. Then I remembered what we had in our freezer. I have a few 15-30 minute menus that I keep in mind and today I thought I’d share five easy dinner ideas for two made completely from ingredients I bought at Walmart. Tonight’s meal only took 10 minutes!!!

5 Easy Dinner Ideas for Two
1 – Chicken and Vegetable Fried Rice Bowl
- Ling Ling® Chinese-Style Vegetable Fried Rice
- leftover chicken
- green onion
This was our dinner tonight. It took me less than 10 minutes! The fried rice comes in generous single serving microwaveable bags. While it was in the microwave I cut up the chicken and green onions. Then while I was putting the rice in the bowls I microwaved the chicken slices for just one minute. Bikeman was surprised I had it ready so soon. And he actually thought it was better than the fast food Chinese restaurant down the street!
2 – Chicken Yakisoba Noodles Bowl with Broccoli
- Ling Ling® Chicken Yakisoba Noodles
- 1 1/2 cups frozen broccoli florets
Since these noodles already included the chicken I just added broccoli. I microwave the broccoli with a few tablespoons of water for 6 minutes. While the noodles microwave for 7 minutes chop the broccoli up into bite size pieces. Pour the noodles and broccoli into the bowl, mix together, and serve.
3 – “Leftover” Fried Rice with Chicken Dumplings in Chili Sauce
- 2 cups cooked white or brown rice
- 4 cups chopped vegetables (onion, celery, carrots, bok choy, cabbage, etc.)
- 1-2 cups chopped meat (chicken, beef, pork)
- 4 T olive oil
- soy sauce
- sesame oil
- green onions
- wonton strips

Y’all know I don’t like to waste anything and that includes food! So this is one of the dishes I make at the end of the week to use up all the little bits of vegetables and meat. Anything goes for this dish! Start by removing the sauce packet from the dumpling box. Put it in a bowl of warm water to heat. Saute the vegetables in olive oil until softened. Add the rice and meat. Stir. Add soy sauce, sesame oil, and green onions. Follow instructions for microwaving dumplings. Divide rice between two bowls and sprinkle wonton strips on top. Pour sauce over dumplings and serve.
4 – Beef Bibimbap Bowl
- Ling Ling® Bibimbap Beef Fried Rice
- 2 eggs
Bibimbap is a Korean dish that is traditionally served with a fried egg on top. Simple fry a couple of eggs to your liking while the rice is in the microwave for 7 minutes.
5 – Asian Salad with Chicken with Pork Dumplings in Chili Sauce
- 1 bag coleslaw mix
- 1/2 c sliced almonds
- 2 chopped green onions
- 2-3 T sesame ginger dressing
- Ling Ling® Pork Dumplings in Chili Sauce
Follow directions on dumpling box. While the dumplings cook, toss first 4 ingredients together in salad bowl. Pour sauce over dumplings.
