It’s here! It’s here! Fall is finally here!!! The weather has finally cooled off a bit this week and I’m ready to do some fall baking! Today I wanted to share one of my favorite fall recipe with you, salted caramel apple hand pies, and share some photos from our trip up to Apple Hill where these apples were actually grown!
These photos were taken back in the fall of 2014. We took the senior citizens from our church on a field trip to Apple Hill in the Sierra foothills. It was my first trip there… beautiful! We ate so many apples that day, discovered some new varieties, ate apple fritters as big as our face, and brought back more apples than I’ve ever bought at one time!
So what do you do when you have an abundance of apples? Make apple pie! We scoured the internet for some new recipes. We usually make a very simple apple pie. Two crusts with sliced apples and spices in between. We were ready for something new. We combined a few of the best sounding recipes. This is what Bikeman came up with.
Salted Caramel Apple Hand Pies
- pie crust of your choice (I used a Pillsbury refrigerated pie crust to make it even easier.)
- 2 cups peeled & chopped Granny Smith apples
- 2 tsp lemon juice
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp ground cloves
- 1/4 cup white sugar
- 2 tsp flour
- 12-15 soft caramels, chopped
- sea salt
- egg wash
- turbinado sugar
Preheat oven to 425 degrees.
Mix apples, lemon juice, cinnamon, sugar, and flour together in a large bowl.
Roll out the dough and cut it into 3″ circles. Place dough circles on baking sheet, spoon the apple filling in the center of each circle, top each with equal amounts of caramel and a sprinkle of sea salt.
Place the second dough circle on top, stretching it to fit, and crimp the edges with a fork. Brush on egg wash and sprinkle sugar on top. I also added a tiny apple cut out of the dough scraps to the top.
Bake at 400 for 15 minutes or until browned. Beware… you’ll want to eat one as soon as it comes out of the oven but they’re hot!
This was only the FIRST apple pie recipe we made that day. We tried THREE all together! The others will be coming later.

Yum. Those look good. I love apples and I love apple pie. I just don’t enjoy peeling and slicing to get the apples into the pie.
