Anyone else love hummus? I do. I got addicted to it when our daughter and son-in-law lived with us for a while. He would make it from scratch all the time. In fact, when they moved out he bought me a supply of canned garbanzo beans so I could keep making it myself! Anyway, I’ve tested out several recipes since then and this EASY pumpkin hummus is the best I’ve ever had — homemade, store-bought, OR restaurant!

Ingredients for Easy Pumpkin Hummus
- 1 – 15 oz. can garbanzo beans, drained
- 1/2 c. LIBBY’S® 100% Pure Pumpkin
- 2 cloves garlic
- juice from 1/2 lemon
- 2 T. tahini
- 4 T. olive oil
- 1 t cumin
- 1/2 t. salt
- 1/2 t. paprika
- 1/8 t. cayenne
- 1-3 T. water, as needed
- pepitas to sprinkle on top
Place all ingredients, except water and pepitas in a food processor. Blend until smooth, adding water 1 Tablespoon at a time as needed. Sprinkle paprika and pepitas on top.
Yes, it’s really that easy!
Now I have to tell you that I do love hummus but THIS recipe is the BEST HUMMUS I HAVE EVER EATEN! Sorry for yelling but it’s really delicious. I think it’s the pumpkin that makes it so creamy.
I made this for a back-to-school party last year.
